Oksana Kashenko: How did your work start and what was there before?

Grigory Marov: Initially it was a completely collapsed two-story mansion - in a terrible state, with a broken roof. From the very beginning, I proposed to leave the natural brick that has always existed here. The overall concept was to leave the spirit of the mansion that was present here and transfer it to the new interior. The spirit that has survived at least in this facade wall is in the texture of a brick, in a certain antiquity. Another big plus is the garden, which is visible through the windows and should also participate in the interior.

OK.: Why didn't the natural brickwork be left on the wall opposite to the window?

Tatyana Papazova: The building is old. Can not be rebuilt. We had the right to make only major repairs. In order to get the maximum result without a real reconstruction, we had to apply decorating techniques in some places, and we upholstered the entire back wall with wood. Furniture and finishing materials selected Grisha for us, so there were no problems with compatibility even when he boldly mixed different styles.

G.M .: All the high-tech elements that we wanted to do here somehow fit into this glamorous and classic environment. In general, I wanted to create a modern interior, but "painted" with classic textures. For example, the strip on the ceiling is absolutely classical, just its rhythm is a bit unusual here, but nevertheless even this rhythm is from the classics. The structure of the interior is modern - it is an open space, and modern suspended ceilings, over which ventilation passes, and long horizontal lines, and a staircase in glass and metal.

OK.: From where on the glass enclosure of the stairs there is a drawing of a mallow?

G.M .: Is it a mallow? I'm just not very good at botany. I wanted this hi-tehkovskuyu ladder to make more gentle. The first thought was to draw a pattern of clouds. We had a glass in the center that connected the spaces of all three floors, so we wanted something airy, clouds ... Then there were other options, both with the forest and with some kind of nature. The result was delicate flowers.

OK.: The first floor you have more democratic, and the second is luxurious, with an abundance of decor ...

TP: The first floor is more for breakfast. We wanted people, like in French cafes, to come just to drink coffee or a cocktail. In order to have movement, a large number of tables to sit at, eat ice cream, try snacks. And the second floor was supposed to be more glamorous, relaxed, evening. I really like the idea of ​​candles on the wall - in the evening it is cozy from their light.

G.M .: Candlesticks were found almost immediately. We looked and decided that these would fit. It was necessary to fill the space with decor, add more such semi-vintage gold carved things. Tatiana actually wanted a classic interior, even drove me to her home in order to show the classics that is close to her. But I imagined the structure of the space of modern, and the sensations of the classics achieved using classical textures and an abundance of decor.

TP: Yes ... Grisha brought a chandelier, which is now hanging above the stairs, and said: "Here's a classic for you." And indeed, this whole neighborhood of styles turned out to be very organic.

OK.: I am genuinely surprised how expensive your furniture is. It seems that you did not save on it at all. This is an unusual situation for a restaurant. Usually they save on upholstered furniture, they order sofas somewhere in factories near Moscow.

TP: We, frankly, did not save on anything here at all. Grisha came and said: "I offer you this material here, although I know in advance that you will refuse it, because it is very expensive." And I looked at him and said that we will buy it. How could you refuse material that you liked?

G.M .: Just such a task was to make the second floor as expensive as possible. Therefore, there are expensive and textures, and materials, and furniture.

OK.: Who is your chef? And who makes such delicious desserts?

TP: Our chef is a master of his craft, he worked both in America and in Europe. And our pastry chef worked in France, so all his desserts are so delicious. And what kind of chocolate does he make at home! At the opening, he created an exact chocolate copy of our building with a garden, with a gazebo, and all this was highlighted with lanterns. It was this gentle dessert that he himself invented and called it in one word - “Utropoliny”. And then I realized: this is Polina's Morning, in honor of my daughter. The restaurant, by the way, is named "Polly Garden" - also in honor of my daughter.
