There are already four chain restaurants in the country where beer is brewed and poured here, where the visitor is happy to demonstrate the work of the mini-brewery plant. The Novosibirsk Tinkoff, like everyone else, was designed by a team of St. Petersburg architects led by Vasily Syringe and Vladimir Burygin.SALON: What is the peculiarity of working on the interior of the restaurant-factory? Vladimir Burygin: In Tinkoff, a beer restaurant is combined with a plant. Thus, the two production, rather complex in themselves, with their own laws and strict technological conditions, must be combined. And combined not just geographically. The plant should be a decoration in the design of the hall. All similar restaurants in the world are arranged in this way - where there is a beer factory, it will definitely become part of the interior, the “actor”. This, by the way, adds to the success of the establishment - visitors see the production process, see that beer is not brought from somewhere, and here it is produced and bottled here. But here the main difficulty for working with such an interior is hidden. After all, the areas in which all this needs to be entered are not always convenient in terms of planning for the organic combination of two industries. S: Does the plant dictate technocratic aesthetics? - This is another problem. How to create an interior? Is this a factory restaurant or a factory restaurant? There should not be a sharp contrast between the interior design of the restaurant and the plant. You can’t make the "hut" and "candelabra" anymore - hi-tech is a priori present in the form of brewing equipment. On the other hand, the interior, apparently, should be warmer and more comfortable than the workshop, in which simply arranged tables. Although we do such things: in a Moscow restaurant we managed to create the impression that visitors are sitting right in the factory. S: How do you achieve recognition of corporate identity, creating interiors unlike each other? - There are restrictions that affect the layout: technological processes, sanitary standards, network requirements. There is not much freedom left. In this case, our approach to solving the problem can be called "unintended design": the elements that are used for decoration are almost abstract and should evoke certain associations. For example, a tree wired with metal stripes is associated with a wooden barrel. It would be possible to put a real barrel, attach a crane to it, but this would not be an architectural, but a decorating approach. Of course, some “similarity” of all the establishments of the chain is meant, however, since each restaurant is unique in its location, constructive basis of the building and layout, they are all different and cozy in their own way. Although comfort is a category which is difficult to give a "professional" definition. "Cozy - uncomfortable" is a subjective concept, almost physiological.S: Tell us more about Novosibirsk "Tinkoff'e." - In the Novosibirsk restaurant - warm colors of copper and natural wood. This is due to Novosibirsk itself, where the houses are mostly gray, and the color in the city is introduced by advertising and rather randomly. And, of course, the climate dictates a certain range. In this Tinkoff, as in the others, there is no total design pressure. We generally try unnecessarily to not overload space with details.
